I made, and am still updating this project made in minecraft, using a mod called computer craft (CC:Tweaked). This mod adds computers that you can program with lua.

This project started as a basic OS for the phones in the mod, just for basic things. The project has now grown to be well over 1700 lines of code and does much more.

This operating system now includes a desktop and turtle version, with a boot loader and program manager along with many, many programs. The server was ported to run in python over websockets, and has support for custom modules/plugins
